Assorted beverages and cocktails are always a great idea for parties. Step up your drinking game and serve delicious Jell-O shots that will get everyone excited to party! The fun thing about Jell-O shots is that you can be as creative as you want. You can customize the color, flavor and how you present them to suit any theme or holiday!

Today we’re whipping up the most incredible Guinness and Bailey’s Jell-O shots. They look like miniature pints of Guinness and we all know miniature everything is adorable! The best part is that our recipe requires 4 simple ingredients (plus water) and they can be prepared surprisingly last minute!

To provide an authentic Guinness flavor, the bottom layer of these Jell-O shots contain cold Guinness Stout. In addition to Guinness and gelatin, you’ll also need to add a chocolate or coffee liqueur of your choice. We chose to use Kahlua which has a wonderful sweet coffee flavor that pairs perfectly with the flavor of Guinness. Creme de Cacao is another great option if you want a sweeter flavor.

When making these Jell-O shots, it’s important to allow the gelatin to “bloom”. This process allows the gelatin to soften which ensures a smooth texture for the finished product.

Once the gelatin has had time to bloom, it’ll be time to add the hot water. You can use a fork or a whisk to combine the gelatin with Guinness, liqueur, and hot water. When filling the shot glasses, ensure that you do not fill the glasses more than a 1/2 to 2/3’s full so that you have enough room to add the next layer.

It’s important to allow the first layer to set so that Guinness and Bailey’s do not mix together. We found that it took the first layer 30 minutes to set enough to keep them separate. The beer head, also known as the frothy foam is made from gelatin, Bailey’s, and water. Once again, allow the gelatin to bloom to ensure this layer has a smooth texture too. When pouring the mixture into the shot glasses, you may notice that some bubbles begin to develop – keep them! It only adds to the authentic look of a frothy pint of beer, so don’t worry about trying to get rid of them.

Once the Jell-O shots have fully set you’ll be able to serve them up to friends and family that are of legal drinking age (of course!). The fun thing about these Guinness and Bailey’s Jell-O shots is that they perfect for any celebration. Consider jazzing them up for any theme by adding a dash of themed sprinkles such as shamrocks for St. Patricks Day, red white and blue sprinkles for 4th of July, gold sprinkles for New Year’s Eve and so much more! Allow your creativity to run wild and most importantly, have fun with it! These minis are sure to make your guests snap a pic before shooting it back. Cheers!

Ingredients

  • 1/2 cup cold Guinness Stout
  • 5 tsp (or 2 envelopes) + 2 1/2 tsp (1 envelope) unflavoured gelatin
  • 1/2 cup of any chocolate or coffee liqueur
  • 1 cup + 1/2 cup hot water
  • 1/2 cup Bailey's

Equipment

  • Plastic shot glasses

Method

  • Add Guinness to a bowl and lightly sprinkle 5 tsp gelatin on top, covering the entire surface. Wait 1 minute to allow the gelatin to bloom.
  • Add in chocolate liqueur and 1 cup hot water and stir until gelatin has dissolved.
  • Divide evenly between shot glasses, filling until about ½ - ⅔ way full.
  • Place in fridge to set for 30 minutes.
  • Once set, pour Bailey’s into a bowl and lightly sprinkle 2 ½ tsp gelatin on top, covering the entire surface. Wait 1 minute to allow the gelatin to bloom.
  • Add in 1/2 cup hot water and stir until gelatin has dissolved.
  • Top each shot glass off with Bailey’s mixture and return to the fridge to set at least 30 minutes.
  • Garnish with sprinkles to suit your theme and enjoy responsibly!

Notes:

The serving sizes will vary depending on the size of shot glasses you use. We found small plastic shot glasses that can hold 1 oz. of liquid and we were able to make 21 servings.
