Guacamole was probably the first green food I truly fell in love with. Once you’re hooked, you’re hooked for life. You will never again think twice about adding guacamole for 99 cents to your Chipotle order, because you know it’s worth it. You’re worth it. Guacamole may be some luxury add-on for your burrito or nachos, but that’s not all. There’s so many new ways to try guacamole, likely due to a sea full of people just like me – trying to figure out how to eat more of the dang stuff! Not only is it tastebud friendly, it’s also good for your health. Made mostly of ripened mashed avocados, guacamole is packed full of fiber, good fats, vitamins like folate and cholesterol reducing oleic acid. Ready to venture into new guacamole worlds? Let’s guac and roll!

1. BLTG

2. Guacamole Stuffed Chicken

Stuffing chicken is always an excellent way to take it from bland to bomb, and filling it with creamy guacamole is probably one of the best stuffing choices you can make. Get ready for a new weeknight favorite!

3. Vegan Guacamole Quesadillas

Quesadillas don’t necessarily mean cheese. I mean, cheese is life – but not everyone can indulge in it, and while you may be looking at the photo and thinking “but that’s cheese right there”, it’s not, it is actually shredded carrots…sneaky. You won’t miss the cheese, because guacamole is all the creamy goodness you need right now.

4. Guacamole Breakfast Tostadas

So many times we limit the guacamole in our lives because we don’t have enough use for a single bowl of it all to ourselves. Adding guacamole to breakfast, lunch and dinner however, changes that. I mean, nobody likes wasted food, and guacamole will go brown if you don’t eat it up. So get after it, already. All the guac!

5. Guacamole Deviled Eggs

I like them, Sam-I-am! Oh that book, that book that Dr.Seuss wrote to make us all eat our green eggs and ham. Well, much easier knowing the “green” is guacamole. Just look at them in all their green glory.

Prawns cooked and rolled in a delicate rice paper wrapped filled with guacamole. It’s a refreshing lunch or appetizer. Served simply with lime wedges, these roll-ups are a brilliant use of both prawns and guac.

9. Guacamole Pizza

Pizza does not have to be all crust, red sauce, mozzarella cheese and pepperoni. That’s merely ones introduction into pizza, before you graduate to kick ass sauces like guacamole, and toppings like fresh tomatoes, corn and ribbons of zucchini.

10. Loaded Guacamole Sweet Potato Fries

I know I know, it’s a merging of worlds. Just think about it though, guacamole is one helluva dip, and sweet potato fries are one helluva dipper. Plus, guacamole is full of good healthy fats unlike the traditional sweet potato fries & dips that are typically a heavy aioli, mayonnaise based sauce. I mean if you have to make healthy sacrifices, guacamole is hardly settling for less 😉

15. Guacamole Rice

Rice is one of my favorite side dishes. It’s naturally gluten free, can be doctored up in a hundred different ways, and served alongside almost anything. Mixing it with guacamole is kind of genius. I mean – throw that in a burrito, side it with chicken, maybe some creole shrimp? Wheels are turning…
